Kenyan Cabbage Stir Fry


This recipe was a happy afterthought. I was having a Kenyan themed dinner and while rummaging in the fridge for the various vegetables I needed I noticed half a head of neglected cabbage sitting in the drawer. And as luck would have it, I had all the rest of the required ingredients as well for the recipe I had spotted earlier on Jikoni Magic.  

3 Tbsp. oil
1 medium red onion, sliced
1 jalapeno, cut in half
4 cloves garlic, chopped fine
2 in' ginger, chopped fine
2 carrots, sliced thin
1 tsp. curry powder
1 red bell pepper, sliced
handful of cilantro, chopped
1/2 medium head cabbage, sliced very thin
4 green onions, sliced, whites and green parts separated
juice of 1 lime
Salt and pepper to taste

Heat the oil in a large frying pan. Add the onions and cook just until softening. Add the jalapeno, garlic, and ginger and cook for 1 minutes. 

Add the curry powder and cook, stirring, for another minute. 

Add the carrots and keep cooking until starting to soften. 

Add the red bell pepper and cilantro and cook for 1 minutes and then add the cabbage and the white parts of the green onion. Cook, stirring often, until the cabbage starts to soften. Let cook, untouched for a few minutes more until mostly cooked but it still retains some firmness. Add the green parts of the onion and stir in. 

Remove from the heat and squeeze both halves of the lime over the top and taste for salt and pepper. 

Serve with rice and kachumbari.

If not serving immediately do not squeeze the lime on the top. Chill and reheat before adding the lime.
